Our Iberian Shoulder comes from a selection of bred iberian pigs raised in semi-wild conditions, fed on grains and pulse crops in pasturelands, and is produced using the best traditional, hand made methods. The front legs of the iberian pig are processed with salt and then undergo a very slow drying and maturing process which gives them the organoleptic typical texture and flavour. All this is done subject to the strictest quality controls. We use the latest technology to preserve all the aroma, taste and colour of our iberian products.
Boneless Shoulder will end up with around 55% less of the total weight; 30% weight is the bone, and the 25% left is the weight of the hoof, outer rind and excess fat (fat that is not eaten).
